Ingredients:
- 1 cup of sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup psyllium husk
- 1/2 cup sliced almonds
- 1/3 cup hemp seeds
- 1/3 cup chia seeds
- 1/3 cup flax seeds
- 3 tsp sesame seeds
- 2 tsp coconut sugar
- 1 tsp kosher salt
- 1/4 cup extra virgin olive oil
- 1 1/2 cup boiling water
Start by preheating the oven to 400°F and grease a loaf pan with a little bit of olive oil.
Combine all the ingredients in a bowl except the water. Mix well to ensure that all the ingredients are nicely combined. Add the hot water to the bowl and mix firmly until it forms a paste. You will see the psyllium husk and chia seeds swell straight away.
Add the mixture to your greased loaf pan, patting it down, ensuring that it forms a compact rectangle. Bake for about one hour, then let cool completely for another hour before removing from the pan. This is an important step to ensure that the loaf comes out in one piece. Et voila!
