Looking for a quick & healthy meal? Try out this soba noodles stir fry packed with vegetables!
Prep time: 5min / Cook time: 10min / Yield: 4 servings
Ingredients:
- 3 bunches of soba noodles
- 2 broccoli heads, washed
- 6oz of shiitake mushrooms, washed
- 1/4 cup of sesame oil
- 2 garlic cloves, minced
- 1/4 soy sauce
- 1/4 mirin
- 2 teaspoons of salt
- Sesame seeds (optional)
Minced the shiitake mushrooms lengthwise and set aside.
Cut the broccoli heads into florets. Boil water in a big pot, and blanch the broccoli florets for 2-3min. Scoop them out and set aside, keeping the water boiling.
Add the bunches of soba noodles in the boiling water, and cook as instructed on the packaging and set aside.
Heat the sesame oil in a big pan, and add the garlic. Once fragrant, add the mushroom and cook for about 3min. Add the broccoli and cook for another 3min. Add the soba noodles, then incorporate the soy sauce and mirin.
Stir fry for 2min and it is ready to plate. Optional: sprinkle sesame seeds on top!
