This one is a real winner as you get to taste the BBQ charred flavors and the leafy green taste all in one! Drizzled with a spicy lemon yogurt dressing to balance acidity and add a little kick, this will knock your socks off!

Preparation time: 10 min / Cooking time: 10min / Yield: 3 – 4 servings

Ingredients:

For the Lettuce:

  • 3 Romaine lettuce hearts
  • 2 tablespoons of Extra Virgin Olive Oil
  • Salt

For the dressing:

  • 2 tablespoons of plain yogurt
  • Half a lemon
  • A pinch of garlic powder
  • A splash of the hot sauce of your choice (I used Tapatio)
  • 2-3 tablespoons of water
  • Salt & Pepper to taste

Thoroughly wash the romaine lettuce & pat dry. Remove the leaves on the outer layer and chop the top inch. We want to work with the firm part of the lettuce. Coat with extra virgin olive oil & a generous pinch of salt, and set aside.

Prepare your grill for high direct heat.

In a small bowl, combine the yogurt, lemon, garlic powder, hot sauce, and water. The water will help achieve optimal drizzling consistency. Add salt & paper to taste.

Grill the romaine lettuce hearts until brown, rotating them every 2 minutes.

Plate & drizzle over the spicy yogurt lemon dressing ET VOILA!
